I’m a professional barista and natural processed coffees from Ethiopia tend to be among my favorite coffees to drink. I brought this coffee into my cafe and taste tested it multiple times using different brew methods and recipes, including Clever dripper, V60, and aeropress. My coworkers and I thought the coffee was bland, with the only flavor notes being hay/vegetal flavors, and a general “roasty” flavor. While the roast seemed to be even, there was definitely something off with this coffee. There were no fruity, floral, or sweet flavor notes at all, which is highly unusual for a natural Ethiopian. Perhaps the green coffee was already old before it was roasted, or maybe something went wrong at the roastery. I tried 3 different roasts from Brass Beans, and this was the one I was most excited about but it was unfortunately disappointing.
